Instructions
- Preheat the oven to 375°F (190°C).
- Rub the chicken with olive oil, salt, and pepper.
- Stuff the chicken with lemon halves and garlic.
- Place the chicken in a roasting pan.
- Add chicken broth to the pan.
- Arrange potatoes and asparagus around the chicken.
- Sprinkle rosemary and thyme over the chicken and vegetables.
- Roast for 1 hour and 15 minutes or until the chicken is cooked through.
- Let the chicken rest for 10 minutes before carving.

- For extra flavor, marinate the chicken overnight.
- You can substitute vegetables based on your preference.
- Use a meat thermometer to ensure the chicken reaches 165°F (74°C).
