Description
A simple and flavorful slow cooker roast beef made with onion soup.
Ingredients

- 3 pounds beef roast
- 1 packet onion soup mix
- 1 cup beef broth
- 2 cups carrots, chopped
- 1 cup potatoes, diced
- 1 onion, sliced
- Salt and pepper to taste
Instructions
- Season the beef roast with salt and pepper.
- Place the sliced onion at the bottom of the slow cooker.
- Add the carrots and potatoes on top of the onions.
- Put the beef roast on top of the vegetables.
- Sprinkle the onion soup mix over the roast.
- Pour the beef broth around the roast.
- Cover and cook on low for 8 hours or until the beef is tender.
Notes
- Adjust cooking time based on the size of the roast.
- You can add other vegetables as desired.
- Serve with gravy made from the cooking liquid.
