Ingredients

  • 3 pounds beef roast
  • 1 packet onion soup mix
  • 1 cup beef broth
  • 2 cups carrots, chopped
  • 1 cup potatoes, diced
  • 1 onion, sliced
  • Salt and pepper to taste

Instructions

  1. Season the beef roast with salt and pepper.
  2. Place the sliced onion at the bottom of the slow cooker.
  3. Add the carrots and potatoes on top of the onions.
  4. Put the beef roast on top of the vegetables.
  5. Sprinkle the onion soup mix over the roast.
  6. Pour the beef broth around the roast.
  7. Cover and cook on low for 8 hours or until the beef is tender.
