Ingredients

- 3–4 lbs corned beef brisket
- 1 onion, quartered
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon black peppercorns
- 3–4 bay leaves
- 4–5 medium potatoes, quartered
- 4 carrots, cut into chunks
Instructions
- Place the corned beef in the slow cooker.
- Add the onion, garlic, beef broth, peppercorns, and bay leaves.
- Cook on low for 8-10 hours or until tender.
- 30 minutes before serving, add the potatoes and carrots.
- Remove the corned beef, slice, and serve with vegetables.

- Adjust seasoning to taste before serving.
- Serve with mustard for added flavor.
