Ingredients
Scale
- 1 pound Pasta (Linguine, fettuccine, or your favorite pasta shape)
- 1 pound Salmon fillets (Skin on or off, cut into 1-inch pieces)
- 2 tablespoons Olive oil
- 2 cloves Garlic (Minced)
- 1 cup Heavy cream
- 2 tablespoons Lemon juice (Freshly squeezed)
- 1 teaspoon Lemon zest (From one lemon)
- 2 tablespoons Fresh dill (Chopped)
- to taste Salt
- to taste Black pepper
- for serving Parmesan cheese (Grated)
Instructions
- Cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and cook for about 30 seconds, until fragrant.
- Add the salmon to the skillet and cook for 3-5 minutes, or until cooked through and flakes easily with a fork.
- Pour in the heavy cream, lemon juice, and lemon zest. Bring to a simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
- Stir in the fresh dill, salt, and pepper to taste.
- Add the cooked pasta to the skillet and toss to coat with the sauce. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Serve immediately, garnished with grated Parmesan cheese.
Notes
- For a lighter version, you can substitute half-and-half for the heavy cream. You can also add other vegetables to the dish, such as asparagus, peas, or spinach.
