- 3–4 pounds of beef roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, quartered
- 2 cups beef broth
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Season the beef roast with olive oil, salt, and pepper.
- Place the roast in a roasting pan.
- Add the chopped carrots, potatoes, and onion around the roast.
- Pour beef broth over the roast and vegetables.
- Sprinkle rosemary and thyme on top.
- Roast in the oven for about 1.5 to 2 hours, or until the meat reaches your desired doneness.
- Let the roast rest for 15 minutes before slicing.
