  • 1/4 cup Fresh Parsley (chopped)
  • 2 tablespoons Fresh Mint (chopped)
  • 1 cup Cherry Tomatoes (halved)
  • 1/2 Cucumber (diced)
  • 1/2 cup Feta Cheese (crumbled)

Instructions

  1. Cook the orzo pasta according to package directions, using vegetable broth instead of water for added flavor. Drain and rinse with cold water to stop the cooking process.
  2. In a large bowl, whisk together the olive oil, lemon juice, and lemon zest.
  3. Add the cooked orzo pasta, parsley, mint, cherry tomatoes, and cucumber to the bowl with the dressing. Toss to combine.
  4. Season with salt and pepper to taste.
