- 1 cup Orzo Pasta
- 2 cups Vegetable Broth
- 1/4 cup Olive Oil
- 2 tablespoons Lemon Juice
- 1 teaspoon Lemon Zest
- 1/4 cup Fresh Parsley (chopped)
- 2 tablespoons Fresh Mint (chopped)
- 1 cup Cherry Tomatoes (halved)
- 1/2 Cucumber (diced)
- 1/2 cup Feta Cheese (crumbled)

- to taste Black Pepper
Instructions
- Cook the orzo pasta according to package directions, using vegetable broth instead of water for added flavor. Drain and rinse with cold water to stop the cooking process.
- In a large bowl, whisk together the olive oil, lemon juice, and lemon zest.
- Add the cooked orzo pasta, parsley, mint, cherry tomatoes, and cucumber to the bowl with the dressing. Toss to combine.
- Season with salt and pepper to taste.
- Gently stir in the feta cheese.
- Serve immediately or chill for later. The flavors will meld together as it sits.
Notes
- You can add other vegetables to this salad, such as bell peppers, zucchini, or red onion. For a protein boost, add grilled chicken or chickpeas.
