Ingredients

  • 4 lbs beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat.
  4. Sear the short ribs on all sides until browned, about 8 minutes.
  5. Remove the ribs and set aside.
  6. Add onion, garlic, carrots, and celery to the pot. Cook until softened.
  7. Stir in tomato paste, thyme, and cook for 1 minute.
  8. Pour in the red wine and beef broth. Bring to a simmer.
  9. Return the short ribs to the pot and cover with a lid.
  10. Braise in the oven for 3 hours until tender.
  11. Remove from oven and let rest before serving.

Notes

  • Serve with mashed potatoes or polenta for a complete meal.
  • You can use a slow cooker for this recipe if preferred.
  • Leftovers can be stored in the refrigerator for up to 3 days.
