Ingredients

- 4 lbs beef short ribs
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C).
- Season the short ribs with salt and pepper.
- Heat olive oil in a large Dutch oven over medium-high heat.
- Sear the short ribs on all sides until browned, about 8 minutes.
- Remove the ribs and set aside.
- Add onion, garlic, carrots, and celery to the pot. Cook until softened.
- Stir in tomato paste, thyme, and cook for 1 minute.
- Pour in the red wine and beef broth. Bring to a simmer.
- Return the short ribs to the pot and cover with a lid.
- Braise in the oven for 3 hours until tender.
- Remove from oven and let rest before serving.
Notes
- Serve with mashed potatoes or polenta for a complete meal.
- You can use a slow cooker for this recipe if preferred.
- Leftovers can be stored in the refrigerator for up to 3 days.
