Ingredients

  • 4 lbs beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 sprigs fresh thyme
  • 1 bay leaf

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat.
  3. Brown the short ribs on all sides, then remove them from the pot.
  4. Add onions and garlic to the pot, cooking until softened.
  5. Stir in beef broth, red wine, tomato paste, salt, and pepper.
  6. Return the short ribs to the pot and add thyme and bay leaf.
  7. Cover and transfer to the oven.
  8. Cook for 3 hours or until tender.
  9. Remove from oven and let rest before serving.

Notes

  • For extra flavor, marinate the ribs overnight.
  • Serve with mashed potatoes or polenta.
