Ingredients

- 4 lbs beef short ribs
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 sprigs fresh thyme
- 1 bay leaf
Instructions
- Preheat your oven to 300°F (150°C).
- Heat olive oil in a large Dutch oven over medium-high heat.
- Brown the short ribs on all sides, then remove them from the pot.
- Add onions and garlic to the pot, cooking until softened.
- Stir in beef broth, red wine, tomato paste, salt, and pepper.
- Return the short ribs to the pot and add thyme and bay leaf.
- Cover and transfer to the oven.
- Cook for 3 hours or until tender.
- Remove from oven and let rest before serving.
Notes
- For extra flavor, marinate the ribs overnight.
- Serve with mashed potatoes or polenta.
- Store leftovers in an airtight container in the refrigerator.
