Ingredients

  • 1 cup cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup diced bell peppers
  • 1 cup shredded cheese
  • 1 teaspoon taco seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add bell peppers and cook until softened.
  3. Stir in black beans, corn, cooked rice, taco seasoning, salt, and pepper.
  4. Cook for about 5 minutes, stirring occasionally.
  5. Remove from heat and let cool slightly.
  6. Place a portion of the filling in the center of each tortilla.
  7. Top with shredded cheese.
  8. Fold the sides of the tortilla and roll it up tightly.
  9. Wrap each burrito in foil or parchment paper.
  10. Store in the fridge or freeze for later use.
