A quick and easy recipe for meal prep burritos that you can make ahead and enjoy throughout the week.
Ingredients

- 4 large flour tortillas
- 1 cup cooked brown rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 cup diced bell peppers
- 1 cup shredded cheese
- 1 teaspoon taco seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add bell peppers and cook until softened.
- Stir in black beans, corn, cooked rice, taco seasoning, salt, and pepper.
- Cook for about 5 minutes, stirring occasionally.
- Remove from heat and let cool slightly.
- Place a portion of the filling in the center of each tortilla.
- Top with shredded cheese.
- Fold the sides of the tortilla and roll it up tightly.
- Wrap each burrito in foil or parchment paper.
- Store in the fridge or freeze for later use.
Notes
- Customize with your favorite ingredients.
- These burritos can be frozen for up to 3 months.
- Reheat in the microwave or oven before serving.
