- 4 pounds Ripe Tomatoes (Choose ripe, juicy tomatoes for the best flavor. Roma, San Marzano, or beefsteak tomatoes work well.)
- 1 cup Water (Optional, for thinning the juice if needed.)
- 1/2 teaspoon Salt (Or to taste)
- 1/4 teaspoon Black Pepper (Or to taste)
- 1 tablespoon Lemon Juice (Optional, for added brightness and preservation.)
- A few dashes Hot Sauce (Optional, for a spicy kick.)
- 1 Celery stalk (Optional, for added flavour.)
Instructions
- Wash the tomatoes thoroughly and remove the stems. Roughly chop the tomatoes.
- Place the chopped tomatoes in a large pot or Dutch oven.
- Add the water (if using), salt, pepper, and celery stalk (if using) to the pot.
- Bring the mixture to a simmer over medium heat. Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the tomatoes are very soft.
- Remove from heat and let the mixture cool slightly.
- Working in batches, transfer the cooked tomatoes to a blender or food processor. Blend until smooth.
- Strain the blended tomato mixture through a fine-mesh sieve or cheesecloth-lined colander into a clean bowl or pitcher. This will remove the seeds and skins, resulting in a smoother juice. Discard the solids left in the sieve.
- Stir in the lemon juice (if using) and hot sauce (if using).
- Taste and adjust the seasoning as needed. Add more salt, pepper, or lemon juice to your preference.
- Chill the tomato juice in the refrigerator for at least 30 minutes before serving. This will allow the flavors to meld and the juice to cool down.
- Serve the tomato juice cold, either plain or with your favorite garnishes, such as a celery stalk, lemon wedge, or a sprinkle of salt and pepper.
Notes
