  1. Prepare the Dough: In a large bowl, combine the masa harina and salt. Gradually add the warm water, mixing with your hands until a soft, pliable dough forms. The dough should not be sticky; adjust water as needed. Let the dough rest for 10 minutes.
  2. Prepare the Filling: If using refried beans, queso fresco, or chicharrĂ³n, have them ready to use. For revueltas, combine equal parts of each filling ingredient.
  3. Form the Pupusas: Divide the dough into equal-sized balls (about 2-3 inches in diameter). Flatten one ball into a thick disc in your palm. Make a well in the center of the disc and place a spoonful of your chosen filling into the well. Gently close the dough around the filling, pinching the edges to seal it completely. Flatten the stuffed dough gently between your palms into a thicker disc, about 1/2 inch thick. Be careful not to tear the dough.
  4. Cook the Pupusas: Heat a lightly oiled griddle or skillet over medium heat. Cook the pupusas for about 5-7 minutes per side, or until golden brown and cooked through. The pupusas should be slightly puffed up.
  5. Serve: Serve the pupusas hot with curtido and salsa roja.

Notes

  • For best results, use a good quality masa harina. If you can’t find Salvadoran queso fresco, you can substitute with mozzarella or Oaxaca cheese. Keep cooked pupusas warm in a low oven until ready to serve. Adjust the amount of filling to your preference. If the dough is too dry, add a little more water, a tablespoon at a time. If the dough is too sticky, add a little more masa harina.
