  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut in the cold butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs. It’s important to keep the butter and shortening cold for flaky biscuits.
  4. Make a well in the center of the flour mixture and pour in the cold buttermilk. Stir until just combined. Do not overmix. The dough will be shaggy.
  5. Turn the dough out onto a lightly floured surface. Gently pat the dough into a 3/4-inch thick rectangle.
