A simple sourdough focaccia bread recipe.
Ingredients
Scale
- 500g bread flour
- 350ml water
- 100g active sourdough starter
- 10g salt
- 30ml olive oil
- Fresh herbs (rosemary, thyme)
- Coarse sea salt for topping
Instructions
- In a large bowl, mix flour and water until combined.
- Add sourdough starter and mix well.
- Add salt and olive oil; knead until smooth.
- Cover and let rise for 4-6 hours or until doubled in size.
- Transfer dough to a greased baking pan.
- Gently stretch the dough to fit the pan.
- Let it rest for 30 minutes.
- Preheat oven to 220°C (425°F).
- Make dimples in the dough and drizzle with olive oil.
- Sprinkle fresh herbs and coarse sea salt on top.
- Bake for 20-25 minutes or until golden brown.
- Cool before slicing and serving.

- Let the dough rise in a warm place.
- Experiment with toppings like olives or sun-dried tomatoes.
