Ingredients

- 2 cups of cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the quinoa, tomatoes, cucumber, bell pepper, and red onion.
- Add the feta cheese, olive oil, and lemon juice.
- Toss everything together until well mixed.
- Season with salt and pepper to taste.
- Chill in the refrigerator for 30 minutes before serving.

- Serve cold for best flavor.
- Can be stored in the fridge for up to 3 days.
