Ingredients
Scale
- 1 cup rice
- 2 cups water
- 1 lb chicken breast
- 2 cups mixed vegetables
- 2 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt to taste
- Pepper to taste
Instructions
- Rinse the rice under cold water.
- In a pot, bring water to a boil.
- Add rice and a pinch of salt, cover, and reduce heat.
- Cook for 15 minutes or until water is absorbed.
- In a pan, heat oil over medium heat.
- Add chicken and cook until browned and cooked through.
- Add mixed vegetables, soy sauce, garlic powder, and onion powder.
- Stir and cook for an additional 5 minutes.
- Serve chicken and vegetables over rice.
Notes
- Use leftover vegetables for convenience.
- Adjust seasoning to your taste.
- Can substitute chicken with tofu for a vegetarian option.
