Instructions
- Preheat oven to 350°F (175°C). Grease and flour a cake pan or line a cupcake tin with liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Add softened butter and milk to the dry ingredients. Beat with an electric mixer on low speed until just combined. Gradually increase speed to medium and beat for 2 minutes.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Pour batter into the prepared cake pan or fill cupcake liners about 2/3 full.
- Bake for 30-35 minutes for cake or 20-25 minutes for cupcakes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- While the cake/cupcakes are cooling, prepare the frosting. In a large bowl, beat softened butter with an electric mixer until light and fluffy.
- Gradually add powdered sugar, beating on low speed until combined. Slowly add milk and vanilla extract, and beat on medium speed until smooth and creamy.
- If desired, divide the frosting into separate bowls and add food coloring to create different colors.
- Once the cake/cupcakes are completely cool, frost them generously. Decorate with Easter sprinkles, mini chocolate eggs, jelly beans, or tinted coconut flakes.
