Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a cake pan or line a cupcake tin with liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add softened butter and milk to the dry ingredients. Beat with an electric mixer on low speed until just combined. Gradually increase speed to medium and beat for 2 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Pour batter into the prepared cake pan or fill cupcake liners about 2/3 full.
  6. Bake for 30-35 minutes for cake or 20-25 minutes for cupcakes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. While the cake/cupcakes are cooling, prepare the frosting. In a large bowl, beat softened butter with an electric mixer until light and fluffy.
  9. Gradually add powdered sugar, beating on low speed until combined. Slowly add milk and vanilla extract, and beat on medium speed until smooth and creamy.
  10. If desired, divide the frosting into separate bowls and add food coloring to create different colors.
  11. Once the cake/cupcakes are completely cool, frost them generously. Decorate with Easter sprinkles, mini chocolate eggs, jelly beans, or tinted coconut flakes.
  12. Serve and enjoy your festive Easter cakes and cupcakes!
