These Easter Cake Mix Cookie Bars are a simple and festive treat! Made with a cake mix and topped with colorful sprinkles and candies, they’re perfect for an Easter celebration.

- 1 box 1 box (15.25 oz) cake mix (Vanilla, yellow, or any flavor you like)
- 0.5 cup 1/2 cup (1 stick) unsalted butter (Melted)
- 2 2 large eggs
- 1 teaspoon 1 teaspoon vanilla extract
- Easter sprinkles
- Easter candies (Mini chocolate eggs, jelly beans, etc.)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, combine the cake mix, melted butter, eggs, and vanilla extract. Mix until well combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Sprinkle the Easter sprinkles and candies over the top of the batter, gently pressing them in.
- Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs.
- Let the bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve.
Notes
- For extra flavor, add a half cup of white chocolate chips or chopped nuts to the batter. Store leftover cookie bars in an airtight container at room temperature for up to 3 days.
