Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Prepare cake batter according to package directions. Fill each cupcake liner about 2/3 full.
  3. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
  4. While cupcakes are cooling, prepare the decorations. If desired, tint a small portion of the vanilla frosting pink for the inner ears.
  5. Once cupcakes are completely cool, frost each cupcake with vanilla frosting.
  6. Sprinkle each cupcake with shredded coconut, pressing gently to adhere.
  7. Cut miniature marshmallows diagonally in half to create bunny ears. Dip the cut side of the marshmallows in pink sprinkles (if using) or the pink frosting. Attach the ears to the top of each cupcake.
  8. Use jelly beans for the eyes and nose. Insert toothpicks or pretzel sticks for whiskers.
