Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add milk, oil, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for 2 minutes.
  4. Gradually add boiling water to the batter, mixing until just combined. The batter will be thin.
  5. Pour batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. While the cakes are cooling, prepare the frosting. In a large bowl, beat butter with an electric mixer until light and fluffy.
  9. Gradually add powdered sugar, beating until smooth. Add milk and vanilla extract, and beat until combined.
  10. To assemble the bunny cake: Place one cake layer on a serving plate. Cut the second cake layer in half. Stand the two halves up against the first layer to create bunny ears. Trim the cake as needed to shape the ears.
  11. Frost the entire cake with white frosting.
  12. Cover the cake with shredded coconut.
  13. Tint a small amount of frosting pink and use it to create the bunny’s nose and inner ears.
  14. Decorate the cake with candy to create the bunny’s eyes, whiskers, and any other desired details.
