Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Add butter and milk to the dry ingredients. Beat with an electric mixer on low speed until just combined, then increase speed to medium and beat for 2 minutes.
- Add eggs and vanilla extract. Beat for 1 minute more.
- Pour batter into the prepared cake pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
- While the cake is cooling, prepare the buttercream frosting. In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
- Gradually add the powdered sugar, alternating with the milk, beating well after each addition. Stir in the vanilla extract.
- Divide the frosting into several bowls and tint each bowl with a different gel food coloring.
- Once the cake is completely cooled, trim the top to create a flat surface. Frost the entire cake with a thin layer of white buttercream frosting (crumb coat) and chill for 30 minutes.
- Using green buttercream, pipe vertical lines around the cake to resemble basket weaving. You can use a basketweave tip for a more defined texture, or a round tip for a simpler design.
- If desired, sprinkle green coconut flakes around the base of the cake to look like grass.
- Using different colored buttercream frostings, pipe small dots or swirls onto the candy Easter eggs to decorate them.
- Arrange the decorated candy eggs on top of the cake to create a visually appealing Easter basket effect.
- For the basket handle, pipe a thick rope of buttercream frosting onto a piece of parchment paper in the shape of an arch. Chill until firm, then carefully attach it to the top of the cake using more buttercream frosting.
- Add pastel sprinkles around the edges of the cake for a festive touch.
- Chill the cake for at least 30 minutes before serving.
