Ingredients

- 3 to 4 pounds chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 carrots, peeled and chopped
- 4 potatoes, peeled and chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Brown the chuck roast on all sides.
- Place chopped onion, carrots, and potatoes in the crock pot.
- Place the browned roast on top of the vegetables.
- In a bowl, mix beef broth, Worcestershire sauce, garlic, salt, pepper, thyme, and rosemary.
- Pour the mixture over the roast and vegetables.
- Cover and cook on low for 8 hours or until the meat is tender.
Notes
- For extra flavor, add a bay leaf.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Use a meat thermometer to ensure the roast reaches 145°F.
