A creamy and cheesy cauliflower soup that is comforting and delicious.
Ingredients

- 1 head of cauliflower, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 cups shredded cheese
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add chopped cauliflower and vegetable broth.
- Bring to a boil, then simmer until cauliflower is tender.
- Puree the soup with an immersion blender or in batches in a blender.
- Return the soup to the pot, stir in milk and cheese.
- Season with salt and pepper.
- Heat through and serve warm.
Notes
- For a vegan option, use plant-based cheese and milk.
- Garnish with chives or croutons if desired.
