Description
Beef Wellington is a classic dish featuring tender beef fillet coated with mushroom duxelles and wrapped in puff pastry.
Ingredients

- 1 beef fillet (2 pounds)
- 8 ounces of mushrooms, finely chopped
- 4 slices of prosciutto
- 2 tablespoons Dijon mustard
- 1 sheet of puff pastry
- 1 egg, beaten
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef fillet with salt and pepper.
- In a pan, sear the beef on all sides until browned.
- Remove the beef and let it cool.
- In the same pan, cook mushrooms until moisture evaporates.
- Spread Dijon mustard over the cooled beef.
- Wrap the beef in prosciutto, then in mushroom mixture.
- Roll out puff pastry and wrap it around the beef.
- Seal the edges and brush with beaten egg.
- Bake for 25-30 minutes until golden brown.
- Let it rest before slicing.
Notes
- Serve with a side of vegetables.
- Best enjoyed fresh out of the oven.
- Can be prepared a day ahead and baked before serving.
