A hearty beef stew recipe that warms you up.
Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add beef and brown on all sides.
- Add onion and garlic; sauté until onion is translucent.
- Stir in tomato paste and Worcestershire sauce.
- Add broth, carrots, potatoes, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 2 to 3 hours, until beef is tender.
- Remove bay leaves before serving.
Notes
- Serve with crusty bread.
- Can be made in a slow cooker.
- Store leftovers in the refrigerator for up to 3 days.
