Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Add onion and garlic; sauté until onion is translucent.
  4. Stir in tomato paste and Worcestershire sauce.
  5. Add broth, carrots, potatoes, bay leaves, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 2 to 3 hours, until beef is tender.
  8. Remove bay leaves before serving.

Notes

  • Serve with crusty bread.
  • Can be made in a slow cooker.
  • Store leftovers in the refrigerator for up to 3 days.
