- 3–4 lbs beef roast
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 cup beef broth
- 3 carrots, chopped
- 2 potatoes, diced
Instructions
- Preheat your oven to 350°F (175°C).
- Season the beef roast with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the beef roast on all sides until browned.
- Transfer the roast to a roasting pan.
- Add the beef broth, carrots, and potatoes around the roast.
- Cover with aluminum foil and roast for 2-3 hours.
- Remove the foil for the last 30 minutes to brown the top.
- Check the internal temperature; it should be at least 145°F (63°C).
- Let it rest for 10-15 minutes before slicing.
Notes
- Adjust cooking time based on the size of the roast.
- Use a meat thermometer for accurate cooking.
- Letting the meat rest improves juiciness.
