  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 cup beef broth
  • 3 carrots, chopped
  • 2 potatoes, diced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the beef roast with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Sear the beef roast on all sides until browned.
  5. Transfer the roast to a roasting pan.
  6. Add the beef broth, carrots, and potatoes around the roast.
  7. Cover with aluminum foil and roast for 2-3 hours.
  8. Remove the foil for the last 30 minutes to brown the top.
  9. Check the internal temperature; it should be at least 145°F (63°C).
  10. Let it rest for 10-15 minutes before slicing.
