Ingredients

  • 4 medium sweet potatoes
  • 1 cup mini marshmallows
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork.
  3. Place sweet potatoes on a baking sheet.
  4. Bake for 45-60 minutes until tender.
  5. Remove from oven and let cool slightly.
  6. Cut open each sweet potato and fluff with a fork.
  7. Mix butter, brown sugar, and cinnamon into sweet potatoes.
  8. Top with mini marshmallows.
  9. Return to the oven and broil for 2-3 minutes until marshmallows are golden.
