Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix apricots, sugar, lemon juice, and vanilla.
- Spread the apricot mixture in a greased baking dish.
- In another bowl, combine flour, baking powder, and salt.
- Add melted butter and milk to the flour mixture and stir until smooth.
- Pour the batter over the apricots.
- Bake for 30-35 minutes or until golden brown.
- Let it cool before serving.
